Monkey Bread Muffins

I've been making monkey bread (also known as Jesus In A Pan, because it tastes that good) for at least 15 years. Yesterday I tried them in a muffin tin.

Genius.

They were just as tasty and cooked much faster than my traditional giant pan of gooey goodness.

And you have to have them with coffee. Because everything tastes better with coffee.


Monkey Bread Muffins
I never use just one tube of dinner biscuits, usually two or three. This recipe will make six muffins, but who eats just six muffins?

Muffin Ingredients
- 1 tube of dinner biscuits
- 2 TBS margarine
- cinnamon sugar

Icing Ingredients
- powdered sugar
- milk
- vanilla

Directions
- Melt margarine in the microwave
- Use scissors or a pizza roller to cut biscuits into quarters
- Toss biscuits in melted margarine until well coated
- Toss butter-coated biscuits in cinnamon sugar until well coated
- Coat muffin tins with non-stick spray or use cupcake papers
- Fill muffin tins to top with coated biscuits
- Bake at 350 for 8-10 minutes or until tops of muffins are golden brown
- Drizzle icing glaze over top of muffins (I use about one cup of powdered sugar, half a teaspoon of vanilla and enough milk to get it to a nice drizzling consistency. I know, very precise. I don't measure the cinnamon sugar either.)
- Try not to eat the entire pan yourself
